Some days I am just DYING for greens. I crave brussel sprouts, broccoli, spinach, or one of my favorites asparagus! One of my roomies loves to make green beans similar to this dish, but this time we tried to make it with asparagus. And I think it was a hit!

What is special about asparagus? It’s loaded with Vitamin A, C, E, and K. It’s also rich in glutathione, which helps break down carcinogens. This helps us fight disease. Amazing, I think. It also contains asparagine, which is a natural diuretic. This will help you flush out that water weight!

Here’s another plus! Asparagus is something you may not need to buy organic. There are certain produce items, sometimes called the dirty dozen, that you should definitely buy organic. But good news is that asparagus is not one of them.

I personally love to cook this in butter and olive oil. It’s up to you if you’d like to use butter or not, but I think it gives great flavor! I use garlic salt, and freshly squeezed lemons to make it extra flavorful. The toasted almonds give a great texture to the recipe. How many almonds, you ask? It’s really up to you about how much crunch you want. Ready for the next step of deliciousness? Add some crumbled bacon. Yum…

I may call it a salad, but essentially it’s chopped asparagus and a delicious blend of flavors. But the point is, we loved it so much we made it twice in one week!Now your turn; enjoy!

Roasted Asparagus Salad Recipe

The best side to serve with any entree!

Ingredients

  1. 1 bundle of asparagus, chopped into thirds
  2. 2 Tablespoons pastured butter
  3. 2 Tablespoons olive oil
  4. 1 cup of sliced almonds
  5. 1 lemon, juiced
  6. ½ Tablespoon garlic salt
  7. Salt and pepper to taste

Instructions

  1. Toast almonds in oven on high broil until slightly brown (about 2-3 minutes).
  2. Add olive oil to pan on medium heat.
  3. Add chopped asparagus to pan and cover pan for about 8-10 minutes.
  4. Add butter, almonds, salt, pepper, garlic salt, and fresh lemon juice. Mix well until butter is melted.
  5. Serve hot with any entree!

Notes

  1. When roasting asparagus, you can cook until your preferred texture. I personally like mine not too hard or too soft, usually around 8 minutes.
