Old-Fashion Recipe for the Best Deviled Eggs

  • 1 dozen eggs (large)
  • 1/3 cup mayo
  • 2 tablespoons mustard
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • Paprika or (smoked paprika) for garnish
  1. Boil the eggs: Place the eggs in a single layer in a saucepan. Cover with water, bring to a boil, then simmer for about 12 minutes ( for perfect eggs). Transfer the hard-boiled eggs to an ice water bath to cool before peeling.
  2. Peel and halve the eggs: Gently peel the eggs. Then cut the eggs in half lengthwise, removing the yolks to a separate bowl.
  3. Make the filling: Mash the yolks with a fork. Add the mayonnaise, Dijon, or yellow mustard, dill or sweet pickle relish, and a dash of salt and pepper. Mash until smooth.
  4. Fill the egg whites: Use a small spoon or a piping bag to add the yolk mixture back into the egg white halves.
  5. Garnish: Place them on a serving platter and give them a sprinkle of paprika.

FAQs

How many deviled eggs do I need per person?

If you’re serving them as a snack or as the main side dish, you can count on serving 2-3 deviled eggs per serving.

Do fresh eggs make a difference?

This may come as a shock, but eggs that are about 7 days old make better boiled eggs than same day farm-fresh eggs. Eggs that are several days old peel easy, turning loose from the shell much smoother after taking a plunge in an ice bath.

How long are stuffed eggs good in the refrigerator?

This mostly depends on the ingredients that are in the filling. On average, they’ll be good for a couple of days, though they’re always best when freshly prepared.

FAQs

Is it better to make deviled eggs day before or day of? ›

Prep deviled eggs too far in advance, and you'll have dried out filling and stinky boiled egg whites. For the best results, prep your deviled eggs up to two days in advance and keep the egg whites and filling separate until you're ready to serve. This prepping method also applies if you're not even leaving the house.

What happens if you put too much mayo in deviled eggs? ›

Going overboard with the mayo.

But when you're heavy-handed with this ingredient, not only will it overpower the taste of the filling, but it can also make for a loose, runny filling that's tough to pipe into the egg white.

What is the difference between angel eggs and deviled eggs? ›

A simple and delicious appetizer, this angel eggs recipe is everything you love from the classic with a nicer name. The only difference between angel eggs and deviled eggs is the name! The recipe can easily be doubled or tripled, making it the perfect finger food option for parties, potlucks, and BBQs.

Should I boil my eggs the night before for deviled eggs? ›

I cook the eggs the day before and (when cooled) cut them in half. I prep the egg yolk mixture (and refrigerate). I place the egg whites, cut side down, onto 1-2 paper towels in a container with a lid. I put one or two paper towels between each layer of egg whites.

Should you refrigerate boiled eggs before making deviled eggs? ›

Boil the eggs in the shell, chill in cold water, drain and refrigerate for up to a week. If you can cover them or seal them in a storage bag or container, even better. Then, peel and make the deviled eggs the day of the meal. The less the storage time, the better the quality.

Why do you add vinegar to deviled eggs? ›

A light-colored vinegar, like the white-wine vinegar we use in these creamy deviled eggs, brings a touch of acidity to the filling and balances the richness of the yolks and the mayonnaise.

What can I use instead of mustard in deviled eggs? ›

Try wasabi or a touch of horseradish to give it that bite without the mustard. Add very small amounts until you get the level you like. If I were trying to make devilled eggs for your hubby I would use mayo, salt, and maybe horseradish . And or hot paprika/cayenne.

Why put paprika on deviled eggs? ›

The paprika will determine the depth of flavor of each bite. You can garnish with any kind (hot or sweet Hungarian, or hot or sweet smoked), but the better the quality, the more complex the flavor.

Why are my deviled eggs rubbery? ›

If you keep the heat turned up too high or too long when you cook an egg, the proteins in the egg white form more and more bonds, squeezing some of the water out of the protein network and making the egg white rubbery.

Why do my deviled eggs get watery after? ›

When eggs are cooked too quickly, over high heat, the protein seizes as it cools and water leeches out.

What do Christians call deviled eggs? ›

At church functions in parts of the Southern and Midwestern United States, the terms "stuffed eggs", "salad eggs", and "dressed eggs" occur instead, to avoid reference to the word "devil". For this reason, the term "angel eggs" is also occasionally used.

What ethnicity is deviled eggs? ›

According to The History Channel, deviled eggs go all the way back to ancient Rome, where eggs were boiled, seasoned with spicy sauces, and then served at the beginning of meals. In the 13th century, stuffed eggs began to appear in the southern, Andalusian regions of Spain.

What are deviled eggs supposed to taste like? ›

You can make deviled eggs taste however you'd like, though the “deviled” part historically meant mustard or horseradish made them spicy. Use hot sauce, chili peppers, whatever you like.

Do deviled eggs taste good the next day? ›

If you plan to send some home with a guest, refrigerate them until your guest is ready to leave. Properly stored, deviled eggs can be kept in the fridge for up to 4 days, but always check for signs of spoilage and give them a sniff to ensure they're still safe to consume.

Are deviled eggs better the second day? ›

As long as you store them in the fridge, you can eat refrigerated deviled eggs (or any cooked egg dish) within four days, according to the USDA, but you should aim to eat them within two days for optimal freshness. Once you take them out of the fridge, you should serve them within two hours.

How do you keep deviled eggs good overnight? ›

If the deviled eggs are filled and assembled, they can be refrigerated for up to 24 hours, covered with plastic wrap, or inside a deviled egg container. However, if the filling and eggs are kept separate, the filling will last 2 to 3 days inside a zip bag, and the hard-boiled egg whites up to 5 days.

Do deviled eggs keep well overnight? ›

Once prepared, deviled eggs should be stored in the refrigerator immediately. They should be consumed within three to four days, which is generally considered the maximum amount of time deviled eggs remain safe to eat when stored in the refrigerator.
